The spirit of Louisiana complete with all the fixings dished up some stiff competition in the streets of downtown Wichita Falls.
"It's not a Cajun cook off unless you have some frog legs and some boudin sausage, we got a little bit of crawfish boundin a little bit of pork boundin," said Matthew Miguez, P2 Honey Badgers.
And about a dozen teams have taken on the challenge to prove their gumbo reigns supreme. For the P2 Honey Badgers who have family ties to Louisiana, it's all about the spices.
"A secret? Oh ya I got it right here. Oooooohhhh we can't tell you what that is," said Miguez.
But last year's winner Ruth Toll says for her, it's all about the gumbo ingredients. And her secret is, the fresher-- the better.
"It's made from scratch, the flavor you see what you eating. It's got the whole shrimp whole crawfish whole crab chicken it's just all in there," said Toll.
Toll hopes all those fresh ingredients will allow judges to serve her the gold medal again.
Shawn Sullivan is a first time competitor. He says his gumbo recipe comes straight out of the bayou, just like MawMaw made.
"My MawMaw has no recipes everything is a dab of this a dab of that a little bit you might get a couple cigarette ashes in. You never know," said Sullivan.
But with all this cooking, the crowds were needed to eat up all the goodness.
