Local Restaurant Needs Grant to Build New Food Park

A popular way food vendors serve customers in larger cities could soon be rolling into Wichita Falls.

The Gypsy Kit opened in the Hamilton building in downtown Wichita Falls the beginning of November,  and now the restaurant owners want to take their menu on the road.

For less than two weeks, the new restaurant has been serving some savory flavors.

“You are hungry right now aren't ya, just looking at that. Fresh bacon, fresh chicken, fresh avocado, and you can tell that its fresh because the flavor is so vibrant, it's really fantastic,” said one customer.

Listening to some descriptions, it seem obvious the menu is not the average meat and potatoes fare.

“It's full of unicorn tears, wonderfulness, happiness, love,” said another.

And sometimes requires more than the usual knife and fork.

“I've got to fold it right, like so, even out the load, and then side ways face it,” said a customer eating a taco.

But now Gypsy Kit owners hope to roll out a new way to serve up their meals. 

“We feel that the downtown area could use a mobile food park. We are working really closely with the health department as well as code enforcement to try to get a food, like you see in the bigger cities here in Wichita Falls,” said Tagan Couch, the Gypsy Kit owner.

With the help from the Mission Main Street Grant, which works with small businesses to build projects benefiting their communities, they hope to build a commissary kitchen, which the city of Wichita Falls requires for mobile vendors.

“We look at doing all different types of things at the commissary kitchen. Whether it be philanthropic or working with small local businesses like the farmers market, we want it to be a culinary center for Wichita Falls,” Couch said.

But maybe soon these unseen foods in the Falls will become a city staple with the help of more mobile meals.

The Gypsy Kit doesn't have the Mission Main Street Grant yet, which they need to make the food truck park, and they can use your help to get it.

By Friday they need 250 votes for their grant plan to be a contender for the $250,000.
