WICHITA FALLS, TX - Matt Bitsche is the owner of the future Wichita Falls Brewing Company.
He is a native of the community, but left to be the head brewer and chief engineer at a brewery in Austin.
"Left there in 2017. Resigned as head brewer to come here and start a brewery here. There wasn't any competition and I really wanted to give something back to the community," Bitsche said.
His idea for a Wichita Falls brewery has been fermenting for a while now, but he says within the next four to eight months it will come to a head at the corner of 7th and Indiana.
"We're really excited. We don't have this option right now. Matt is a great guy -- and has a ton of knowledge. We've been working really closely with him to help make this happen," Henry Florsheim with the Chamber of Commerce said.
"I think it's a romantic idea. We have a great downtown. I've always wanted to be downtown -- even before I moved," Bitsche said.
Right now, his crew is in the beginning stages of refurbishing the building, but plan to give it an industrial, open style feel.
Which means community seating, a bar -- plus an area where you can see the brewing at work. A process he is very passionate about.
"It's what it represents -- I mentioned American style ales and lagers. I love American hops. I love American grown grain. It's America in a glass," Bitsche said.
And soon locals will be able to experience downtown Wichita Falls in a glass as well.
