Southern Girl Catering owner, Tamitha Holloway told us, “What we’re serving today is we have a classic chicken fried steak with homemade mac and cheese and a cream styled corn.”
For Holloway, cooking has always been something she enjoyed.
“Well our style of cooking is all down-home, southern classics, which is what I grew up on,” Holloway said.
Cooking in a restaurant is very new to Holloway.
“When the space became available, the city approached me and asked me if I would be interested in doing it, and at first I was like, absolutely not because I was afraid,” Holloway said. “But, with the type of support that they’ve given me, and the help that they’ve given me, it’s a good thing and I’m very, very grateful for the opportunity.”
Some travelers are happy as well. Sherry Stevens said as she sits here waiting for her flight to Dallas, she can’t help but get hungry.
“When I came in this morning,” Stevens said, “It smelled wonderful, so I plan on grabbing lunch before I leave here.”
Holloway said although everyone’s taste in food may be different, she sees this restaurant surviving.
“While you’re waiting here,” Holloway continued to say, “It is refreshing to know that there is something there available for you.”
Not everyone would agree.
Stephen Schillinger said, “There’s not a big volume of people coming in here, so to really justify building a restaurant in here, I don’t really think that’ll be feasible.”
Schillinger said he’d rather something quicker and fast pace, a fast food restaurant, while this restaurant is more of a made to order restaurant.
“Usually the food comes out between 15-20 minutes, I would say, at the ticket times. It could be less than that,” Holloway said.
Holloway also said she plans on putting her focus on Sheppard Air Force Base to build more clientele and help her new restaurant thrive.
Holloway plans on using the entire facility for events and catering and meetings, something that the other owners did not do, but like Gourmet on the Fly, Southern Girl will have an early morning continental breakfast, a full breakfast menu, lunch and a weekend brunch on Sunday’s.
